Simple Roasted Veggie Salad

Ingredients

Salad

  • 3-4 cups mixed greens
  • ½ cup sweet potatoes, roasted
  • ½ cup broccoli, roasted
  • ½ cup bell peppers, roasted
  • 1 cup carrots, roasted
  • ¼ cup pepitas

Ginger Dressing

  • 1/3 cup tahini
  • 1 Tbsp rice vinegar
  • 1 Tbsp apple cider vinegar
  • 2 Tbsp water
  • 1 Tbsp coconut aminos
  • 1 Tbsp fresh ginger
  • 1 tsp. sesame oil
  • ½ tsp. salt/pepper

Directions

1.  Add Ginger Dressing ingredients, except for the water, in a medium mixing bowl, and combine with a whisk.

2.  Add water until dressing is thin and pourable. Add salt or coconut aminos to taste.

3.  Toss salad ingredients together.
