COBB SALAD WITH HONEY LIME DRESSING

MACROS (SALAD WITH DRESSING)

INGREDIENTS

Salad:

4 ounces rotisserie chicken

2 cups chopped romaine lettuce

1 hard boiled egg

½ avocado

¼ cup chopped cherry tomatoes

¼ cup chopped cucumber

2 tablespoons sunflower seeds

1 piece bacon, cooked and crumbled 

¼ cup mushrooms

Dressing (2 tablespoons per serving):

¼ cup extra virgin olive oil

2 teaspoons lime zest

3 tablespoons lime juice

1½ teaspoons honey

Salt and pepper (to taste)

INSTRUCTIONS

Salad:

SLICE chicken, lettuce, egg, cucumber, tomatoes, and mushrooms and combine in a bowl.

ADD avocado, sliced thin, along with sunflower seeds and crumbled bacon. 

Dressing: 

ADD all ingredients to a blender and blend.

POUR dressing over salad.

ENJOY!

Low Carb to Regular Macro Day Swap: To make more Regular Macro Day-friendly, go for 1/4 avocado, use egg whites only, and omit the sunflower seeds. Use less oil in the dressing and add more lime.
